Kumara Cakes

The New Zealand kumara is a purple skinned and cream-fleshed sweet potato. The flavour is less sweet than many others, which makes it suitable for both savory and sweet combinations.



Kumara Cakes
  
  • 500 grams kumara
  • 1 small onion
  • 25 grams butter
  • 2 eggs
  • Salt and Pepper
  • 1 cup soft breadcrumbs
  • Flour
  • Butter for frying
Boil the kumara until tender. Drain and mash thoroughly. Chop the onion finely, and fry in the butter until tender, but not coloured. Add this, the lightly beaten eggs, the seasonings and the breadcrumbs - and mix. Shape into small round cakes - and dust with flour. Fry in butter until golden.
